Freshness Doesn’t Start in the Shop. It Starts at Sea.

We tend to think of freshness as something measured in a shop — a date on a pack, a chilled counter, how recently something arrived. But for shrimp, freshness isn’t decided there at all. It’s decided in the first hour after the catch, thousands of kilometres away, out on the cold Atlantic.

Let me explain — because it comes down to a question most people never ask.

Not how fresh is this shrimp, but when did its clock start?

For a shrimp, quality begins to change the moment it leaves the water. That’s not a flaw; it’s biology. Every hour after the catch is an hour of gradual, natural change — in texture, in that delicate sweetness, in everything that makes the shrimp what it is. So the question that really matters is simple: how much time passed between the sea and the moment that change was held still?

On a cold-water trawler, the answer is measured in minutes.

Pandalus borealis is cooked and frozen aboard the ship, often less than an hour after being caught, at around -25 to -27°C. This is the quiet, decisive step — the moment the shrimp’s quality is captured at its absolute peak, before transport, before handling, before anything has the chance to fade it. Caught and locked in at source.

Everything we do afterwards is built to protect that first hour.

Because capturing quality at sea is only half the story. From there, the shrimp is brought in and prepared with the same care the catch deserves — peeled by hand, and finished as the fresh, ready-to-eat product that reaches the plate. The freshness you taste at the end isn’t created in a factory. It’s the freshness of that first hour at sea, carried carefully all the way through.

That’s why “how recent” is the wrong question for shrimp. A shrimp’s freshness isn’t about the last few days of its journey — it’s about how little was lost in the very first hour, and how faithfully that first hour was protected from then on.

Get that first hour right, protect it at every step that follows, and freshness stops being a date on a label.
