
Watch a shrimp move calmly and it drifts gently forward, almost delicately. But the fastest, most powerful thing it will ever do — the move that decides whether it lives or dies — sends it shooting in the opposite direction. Backwards. And the part of the shrimp that does it is the part you eat.
Let me explain.
A shrimp actually has two completely different ways of moving, and they belong to two different situations.
For everyday life — feeding, cruising, holding position — it swims forwards, gently, using rows of small paddle-like limbs under its abdomen called pleopods. They beat in a smooth, coordinated rhythm, and the shrimp glides. Calm, controlled, unremarkable.
Then there’s the other mode. The one for emergencies.
When something startles a shrimp — a sudden movement, a disturbance in the water, the shadow of a predator — it doesn’t turn and flee forwards. There’s no time. Instead it fires off one of the most studied reflexes in the animal kingdom: the caridoid escape reaction, better known as the tail-flip.
Here’s what happens, in a fraction of a second. The shrimp’s muscular abdomen — its “tail” — contracts violently, curling underneath the body. That snap drives the tail fan downward and forward, expelling a powerful jet of water. And the water going one way throws the shrimp the other way: backwards, explosively, away from the threat. Some shrimp hit speeds of more than ten body lengths per second doing this.
It’s not a decision. It’s a reflex — an all-or-nothing response wired through giant nerve cells built for pure speed, overriding everything else the moment danger registers. The shrimp doesn’t choose to flee backwards. Its body does it before choice is even possible.
And now the part that connects to your plate.
The engine of that whole manoeuvre — the muscle that curls and snaps to launch the shrimp backward — is the abdomen. The tail. Which is to say: it’s the meat. The plump, curved piece of a shrimp, the part you actually eat, is the escape muscle. Everything that makes it satisfying to bite — that firmness, that dense, clean texture — is the same muscle the shrimp spent its life using to hurl itself away from anything that tried to eat it first.
There’s something fitting in that. The shrimp’s whole body is built around one overwhelming priority: don’t get eaten. The firmness we prize is, quite literally, the physical evidence of a life spent escaping.
So the next time a cold-water shrimp has that perfect, springy bite — that’s not just texture. That’s a survival muscle, the fastest tool the animal had, the thing that threw it backwards out of danger again and again.
