Most people assume all shrimp are basically the same animal, just in different sizes. They’re not. The difference between an ordinary shrimp and an exceptional one is written into how fast it grew — and the best ones are in no hurry at all.
Let me explain.
Resko works with Pandalus borealis, cold-water shrimp caught wild in the North Atlantic (FAO 21). And the single most important fact about them isn’t where they’re caught. It’s how long they take to get there.
In a warm-water farm, shrimp grow fast. Feed, heat and a controlled pond can bring a shrimp to market size in a matter of months. Speed is the whole point of the model.
Pandalus borealis lives on the opposite timescale. It’s a slow-growing, long-lived species that matures over years, not months, in the cold, clean waters of the North Atlantic. That slow pace isn’t a problem to be solved — it’s the entire reason the shrimp tastes the way it does.
Years in cold water give the flesh time to develop what fast-grown shrimp never do: a firm, delicate texture and a clean, distinct sweetness. And that sweetness isn’t seasoning — it comes from the shrimp itself, from the free amino acids like glycine that build up naturally in the meat over a long, slow life. Nothing is added. It’s accumulated.
This is also the part you can’t fake. You can grow a shrimp faster — warmer water, richer feed, a shorter cycle — but what you get is a different animal, not a faster version of this one. Time isn’t a step in the process you can skip. Either the shrimp spent years becoming what it is, or it didn’t.
That’s the quiet advantage behind everything else. Before anyone talks about hand-peeling, or a 40-day shelf life, or a clean label with nothing to hide — there’s this: a shrimp that was allowed to take its time.
The cold water isn’t a detail on the label. It’s the reason there’s anything worth putting on the label at all.
