Nobody Was Looking for It

For most of history, nobody wanted this shrimp.

The North Atlantic had cod — abundant, storied, the reason whole towns existed. A small pink shrimp living hundreds of metres down wasn’t worth the trouble. The first real fishery for it started in 1897. Greenland’s offshore fishery didn’t take shape until 1970.

It was excellent the whole time. It just spent a century in the shadow of a bigger fish.
