The Shrimp Has Blue Blood — and It Explains Something About the Colour

Here’s a fact that sounds like a comic-book invention: the shrimp doesn’t have red blood. It never did. Its blood runs on copper, not iron — and when it carries oxygen, it turns blue.

But the truth is quieter and more interesting than “blue blood,” and it happens to explain something about how the shrimp looks on your plate.

Let me explain.

Our blood is red for one reason: haemoglobin, the protein that carries oxygen around our bodies, is built around iron. Iron bound to oxygen is red. Every red thing about our blood traces back to that single metal.

The shrimp took a completely different path. Instead of haemoglobin, it uses a protein called haemocyanin — and haemocyanin is built around copper, not iron. That one substitution changes everything, including the colour. When copper binds oxygen, it doesn’t go red. It goes blue.

So yes, technically, an oxygenated shrimp carries bluish blood.

But here’s the part the comic-book version gets wrong. Haemocyanin isn’t a vivid blue ink. When it’s carrying oxygen it takes on a faint blue tint, and when the oxygen is released it turns almost completely colourless. The shrimp’s blood — properly called haemolymph — isn’t bright blue at all. It’s mostly clear, with the faintest blue cast. Not dramatic. Just quietly, fundamentally different from ours.

And this is where it connects to something you can actually see.

People sometimes expect seafood to look the way meat does — and meat looks the way it does largely because of blood, iron and haemoglobin staining the flesh red. A shrimp has none of that. No iron-rich red blood to leave its mark. Which is a big part of why cold-water shrimp look the way they do: pale, clean, delicately pink rather than deep red.

That paleness isn’t a sign of something washed out or missing. It’s the natural appearance of an animal that was never built around red blood in the first place. When the shrimp is cooked, the haemocyanin loses even its faint blue entirely — which is why you never see a trace of blue on your plate, and why the flesh reads as clean pink rather than bloody red.

So the next time a cold-water shrimp looks almost too pale, too clean, next to a slab of red meat — that’s not a lack of anything. It’s copper instead of iron. A completely different way of being alive.

The shrimp doesn’t look bloodless because something was taken out. It looks that way because it was never red to begin with.
