Chefs can tell how a shrimp was cooked just by looking at its shape. Straight and grey means raw. A loose C means cooked exactly right. A tight O means too much heat.

The curl comes from proteins contracting — the more heat, the tighter it gets. And a shrimp can never uncurl.
