
Look at a cold-water shrimp and the first thing you notice is the colour — that soft, natural pink. And a fair question follows, one people are right to ask of any food that looks this good: is the colour real, or is it added?
For Pandalus borealis, it’s real. And the reason why is quietly remarkable.
Let me explain.
The pink comes from astaxanthin — a natural pigment from the same family that gives salmon and lobster their colour. But here’s the part most people don’t know: a shrimp can’t make astaxanthin itself. Not a molecule of it. The only way it gets that colour is by eating it — from the plankton and tiny crustaceans it feeds on out in the cold Atlantic.
So the colour isn’t decoration. It’s a record. Every shade of pink is the visible trace of what the shrimp ate and where it lived. Read it the right way, and the colour is really a diet, written on the shell.
And because colour comes entirely from diet, it reflects, very simply, how a shrimp lived. A wild cold-water shrimp eats what the Atlantic provides, and its colour is whatever that natural diet made it — no target shade, nothing added to flatter it. What you see is just the honest result of a wild life in cold water.
That’s why the colour matters more than it looks. It isn’t the point of the shrimp — but it’s a signal you can trust. On a clean label, even the colour has nothing to hide.
